



Neelix is an eccentric baker that Janeway keeps on staff for his occasional flashes of brilliance. Some of the best - and worst - drinks have been due to Neelix finding some wild new combination of spices and “little extras”. He still hasn’t lived down the Leola Root Incident, to the point that leola root is an in-joke among the staff and regulars for something that seems like a good idea to you and a terrible idea to every other person.
Tuvok doesn’t work for Nebula Coffee, per se, but does make sure the books are straight for Kathrine and if it came to it would put on an apron if she needed the staff. He often clashes with Neelix over his inability to keep track of what he puts into his creations making keeping track of stock a nightmare and his flippancy at Tuvok’s suggestions to at least try. Secretly Tuvok bakes a pretty mean cake himself, but feels self-conscious about doing things that others might consider out of character and as such rarely flexes those talents.
Tom is an unreliable part-timer that took the job up after a reckless driving incident totalled his car and his father cut him off financially.
Harry’s the only one that convince him to stick to hours consistently. While he does genuinely have a lot of respect for Katherine, he expects that he’ll mess up sooner or later and figures a letdown from low expectations is better than a letdown from high ones.Harry’s also a part-timer, but is so hours-hungry he might as well be full-time. He probably would’ve gotten the position too if so many weird accidents didn’t happen to him. Eventually Tom started making a little mural out of his meticulous doctor’s notes in the back room, “so that future generations may look back on it in awe”.
B’Elanna basically is the café. A combination of inspired improvements to all the equipment and being the only one who knows precisely what she’s done has made her pretty much indispensable. Despite a few run-ins with both Janeway and Chakotay, B’Elanna considers them both as irreplaceable in her life as she is at her work. Now if only she can convince Seven to stop trying to improve on her improvements, especially if she’s going to be so rude as to succeed at it…

I haven’t thought about Kes getting a nurse degree but yes yes it works for me
She could be alone in the city because the Ocampa are a very small and very private people and not many of them goes away from where they live, but Kes always wanted to explore new opportunities
So she could be alone in the city, getting her degree but she was getting short of money and when the owner of the Coffee shop that she went almost every night offered her a job, she didn’t think twice about accepting, and everyone at the Janeway’s Coffee immediatly gets along with her because she’s adorable and always very kind with everyone, and the EMH could perhaps be her mentor, idk
